Directions
- 1
Prep the pan
- Butter a bundt pan with 2 tbsp softened butter, making sure to get inside all the nooks and crannies. Set aside.
- 2
Make the dough
- In a large measuring cup, combine:
- 1 cup warm milk (110°F)
- ⅓ cup warm water (110°F)
- 2 tbsp melted butter
- ¼ cup sugar
- 2 ¼ tsp instant yeast
- In a stand mixer with a dough hook, mix 3 ¼ cups flour and 2 tsp salt.
- With mixer on low, slowly add the milk mixture.
- Once combined, increase speed to medium and knead until dough is shiny and smooth (about 6–7 minutes).
- If too wet, add flour 2 tbsp at a time until the dough comes together (slightly sticky is fine).
- Coat a large bowl with oil, place the dough inside, cover with plastic wrap, and let rise until doubled (1–2 hours).
- 3
Prepare the coating
- In one bowl, mix 1 cup packed brown sugar and 2 tsp cinnamon.
- In another bowl, melt 8 tbsp butter (1 stick).
- 4
Shape the dough
- Gently remove dough and shape into an 8-inch square.
- Cut into small pieces and roll each into a rough ball.
- Working one at a time, dip each dough ball in melted butter (let excess drip off), then roll in the brown sugar mixture.
- Layer coated dough balls evenly in the bundt pan.
- 5
Second rise
- Cover the pan tightly with plastic wrap.
- Let rise until puffy (1–2 hours).
- 6
Bake
- Preheat oven to 350°F.
- Bake for 30–35 minutes, until a toothpick comes out clean or caramel bubbles at the edges.

Cool and finish
- Cool in the pan for 5 minutes (longer makes it stick).
- Turn out onto a platter and cool another 10 minutes.
- Mix 1 cup confectioners’ sugar with 2 tbsp milk until smooth.
- Drizzle glaze over the monkey bread before serving.
